Puff Paste

Ingredients

Directions

  1. Place ¼ lb of flour on a clean surface and make a well in the center.

  2. Add ½ yolk of an egg into the well.

  3. Add 6 drops of lemon juice.

  4. Place ¼ lb of butter on a clean cloth and fold the cloth over it.

  5. Squeeze the cloth to remove excess water from the butter.

  6. Mix all ingredients together, adding water to achieve a paste consistency similar to the butter.

  7. Flour a rolling pin and the surface to prevent sticking.

  8. Roll out the paste to about ¼ inch thick.

  9. Place the pat of squeezed butter on one half of the paste and fold the other half over it, pressing the edges together.

  10. Let it rest on a plate in a cool place for 15 minutes.

  11. Roll out the paste again and fold it into thirds.

  12. Turn it so the rough edges face you.

  13. Roll it out again and fold it into thirds once more.

  14. Let it rest for another 15 minutes.
