Norfolk Dumplings
Ingredients
Directions
Prepare the dough
Boil a saucepan of warm water.
Place 1 pound of patent flour in a basin.
Add enough cold water to make a smooth dough; it should not be too stiff.
Form the dough into round balls about the size of a large egg.
Cook and serve
When the water is boiling, add the dumplings and boil for 20 minutes.
Remove the dumplings from the saucepan and serve.

What each ingredient does
- Patent flour
- Forms the dough and gives the dumplings their body as it cooks.
- Water
- Hydrates the flour so it forms a smooth, cohesive dough.
The step that matters
Adding the cold water to the flour. Too much water makes a slack dough that falls apart in the boil, while too little makes stiff, dense dumplings. Aim for a smooth dough that holds its shape without being stiff.
