Potato Bread

Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Potato Bread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Heat the yeast liquid on the stove until it reaches about 98°F (37°C).

  2. Add the salt, brown sugar, and butter, then mix in enough warmed flour to make a batter (about 3 to 4 cups).

  3. Cover and let it rise until light and frothy.

Knead and shape

  1. Add the remaining flour until the dough no longer sticks to your hands or the work surface, kneading until smooth and elastic.

  2. Let the dough rise again until it doubles in size.

  3. Gently shape into loaves, place in greased bread pans, and brush with melted butter.

Rise and bake

  1. Cover and let it rise in a warm place until it doubles in bulk again.

  2. Bake in a moderate oven at 350°F (175°C) for about 60 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potato yeast
Yeast ferments the sugars in the liquid, producing gas that makes the dough rise.
Flour
Gluten proteins form an elastic network that traps gas and gives the loaves their structure.
Butter
Adds fat that softens the crumb and gives a tender texture and richer flavour.
Brown sugar
Feeds the yeast for early fermentation and adds sweetness and mild browning.
Salt
Controls yeast activity and strengthens the gluten, giving the dough better structure and flavour.

The step that matters

Warming the yeast liquid. Yeast works best at around body temperature. If the liquid is too hot it can kill the yeast, and if it is too cool the dough will rise slowly or not at all.

Swap the potato

How well each one fits the dish's main ingredients (sugar, butter, flour):

  1. Arrowrootfits better
  2. Shallotfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
