What each ingredient does

Cucumbers
Form the bulk of the pickle and keep a firm, crisp bite after brining.
White wine vinegar
Adds sharp acidity that gives the pickles their sour flavour and helps preserve them.
Sugar
Adds sweetness that balances the sharpness of the vinegar.
Alum
Helps firm the cucumber texture so the pickles stay crisp.
Mixed spice
Contributes warm aromatic flavour to the pickling liquid.

The step that matters

Pouring the hot syrup and sealing. The syrup must be boiling hot when poured over the cucumbers and the cans sealed immediately. Heat drives air out of the cans and helps create a vacuum seal, which keeps the pickles safe and stable.
