Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during frying.
Baking powder
Releases gas in the batter, helping the fritters rise and turn light.
Flour
Forms the main structure of the batter once it cooks.
Boiled rice
Adds body and a soft, tender interior to the fritters.
Milk
Hydrates the flour and gives the batter its liquid base and softness.

The step that matters

Frying in hot lard. The lard must be hot enough to brown the outside quickly. If it is too cool, the batter absorbs fat and turns greasy before the centre cooks through.
