What each ingredient does

Egg yolks
Thicken the mixture as they set with heat, giving it a rich, smooth body.
Gelatine
Sets the liquid mixture so it holds its shape when chilled.
Orange juice
Provides the main flavor and acidity that defines the jelly.
Milk
Adds creaminess and body to the base before it sets.
Whipped cream
Adds lightness and a soft, creamy topping at serving.

The step that matters

Thickening the egg yolks with the hot milk. Egg yolks scramble if they get too hot too fast. Stirring steadily while the mixture thickens keeps it smooth and prevents curdled specks.
