Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam, they give the jelly a light, airy texture.
Gelatin
Sets the liquid as it chills, giving the jelly its firm structure.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.

The step that matters

Stir in the egg whites once the mixture has cooled. If the mixture is still hot, the heat can deflate the beaten whites and cook them. Folding them into cooled liquid keeps the foam intact so the jelly stays light as it sets.
