Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pumpkin
Forms the bulk of the preserve and becomes tender and translucent as it cooks in syrup.
Cut loaf sugar
Sweetens the preserve and, at high concentration, helps preserve it and give it a thick set.
Oranges
Contribute aromatic oil and bitter-sweet flavor from the peel and juice.
Lemon
Adds acidity and pectin from its insides to help the preserve set.

The step that matters

Skimming during the final cook. Skimming constantly removes foam and impurities that rise as the sugar syrup boils, keeping the preserve clear and giving a cleaner flavor and better keeping quality.

Swap the pumpkin

How well each one fits the dish's main ingredients (sugar, orange, lemon):

  1. Limefits better
  2. Vanillafits better
  3. Blueberryfits better
  4. Pumpkinthe original

Fit is the average pairing score against sugar, orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
