Directions

Boil and steam the eggs

  1. Place eggs in boiling water.

  3. Place eggs in a pot of cold water and bring to a boil.

  4. Cook until done.

  6. Use a potato steamer to steam eggs for 4 minutes.

Poach the eggs

  1. Bring a pot of water to a boil.

  2. Add a little salt and ⅓ cup of white vinegar.

  3. Reduce heat to maintain a gentle boil.

  4. Crack each egg into a cup.

  5. Drop each egg into the water.

  6. Repeat until you have 4 or 5 eggs in the pot.

  7. Cover the pot and let sit for 3 minutes.

  8. Remove eggs with a slotted spoon and place them in cold water.

Trim and serve

  1. Trim excess white from the poached eggs.

Shared aroma: acetic acid (sour, vinegar).

Egg and vinegar barely smell alike, yet cooks put them together in 12,922 recipes: they work on texture and structure more than aroma.

What each ingredient does

Eggs
Their proteins set during cooking, giving the dish its firm yet tender structure.
White vinegar
Its acidity helps egg whites set more quickly and hold a neat shape when poached.

The step that matters

Reduce heat to maintain a gentle boil. A vigorous boil tears delicate egg whites apart before they set. A gentle simmer lets the whites coagulate around the yolk, keeping each poached egg intact and rounded.
