Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main flavor and the acidity that the baking soda neutralises.
Milk
Gives the soup its creamy body and mild sweetness.
Butter
Adds richness and a smooth mouthfeel.
Baking soda (in the method)
Neutralises tomato acidity, which helps reduce curdling when the tomatoes meet the milk.

The step that matters

Adding the tomatoes to the milk. Tomatoes are acidic, and acid can make milk proteins clump and curdle, especially when hot. Baking soda is added to the mashed tomatoes first to reduce that acidity. Stir the tomatoes into the milk gently and serve promptly.

Swap the tomato

How well each one fits the dish's main ingredients (milk, butter, pepper):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatothe original
  4. Asparagusfits about as well

Fit is the average pairing score against milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
