What each ingredient does

Shad
The fish itself, whose delicate flesh takes on the salt, spice and vinegar flavors.
Coarse sea salt
Seasons the fish and draws out moisture during the rest, firming the flesh.
Allspice
Adds warm, aromatic flavor to the fish's surface.
Cayenne pepper
Adds sharp heat that flavors the fish.
Cold vinegar
Adds acidity that sharpens the flavor of the fish.

The step that matters

Boil for 20 minutes. Fish flesh turns dry and falls apart when overcooked. Time the 20 minutes from when the water is boiling, and watch that the shad does not boil too hard, since vigorous boiling breaks up delicate flesh.

Swap the allspice

How well each one fits the dish's main ingredients (pepper, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
