Directions

Make the batter

  1. Mix Indian meal and salt with enough boiling water to make a mixture slightly thinner than mush.

  2. Let the mixture cool, then add the yolks of 4 eggs.

  3. Sift flour with baking powder and add to the mixture.

  4. Stir in enough sweet milk to achieve a batter consistency similar to griddle cakes.

Finish and bake

  1. Fold in the beaten whites of 4 eggs just before baking.

What each ingredient does

Indian meal
Forms the base structure of the pancake as cornmeal set by heat.
Egg yolks
Add richness and fat, helping the batter bind and brown.
Egg whites
Whipped and folded in, they add lift and a lighter, airier texture.
Baking powder
Releases gas in the batter, helping the pancakes rise and stay tender.
Flour
Adds gluten-free-independent body, giving the batter more structure and chew.
Sweet milk
Supplies moisture and sets the batter to a griddle-cake consistency.

The step that matters

Folding in the beaten egg whites. Whites hold air only while whipped; over-stirring or folding late deflates them, losing the lift that the baking powder and whites are meant to provide. Fold gently and bake promptly.
