Oyster Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the patties

  1. Cut the tops off the shredded wheat biscuits to create pattie shells.

  2. Place 3 to 4 oysters in each shell and season with coarse sea salt, black pepper, and bits of butter.

  3. Cover the oysters with the tops and brown in a 400°F (200°C) oven until heated through.

Make the sauce

  1. In a saucepan, combine the oyster liquor with 1 pint of milk, 1 tablespoon of butter, and 1 tablespoon of flour.

  2. Season the sauce with black pepper and coarse sea salt, and cook until it thickens.

Serve

  1. Serve the patties with the sauce poured over them.

What each ingredient does

Oysters
Provide the main filling, with their briny flavor carried into the dish.
Flour
Thickens the sauce as it cooks, giving it body.
Milk
Forms the base of the sauce, adding creaminess and moisture.
Butter
Adds richness and fat to the filling and the sauce.
Shredded wheat biscuits
Form the crisp, browned shells that hold the filling.

The step that matters

Cooking the sauce until it thickens. Flour needs sustained heat in the liquid to swell and gelatinize. Stopping too early leaves a raw, pasty taste and a thin sauce, while cooking gently while stirring prevents lumps.
