Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Butter a quart pudding dish and fill it half full with sliced tart apples.

Make the pudding

  1. In a bowl, mix together 1 cup sugar, 1 egg, ½ cup butter, ½ cup milk, 1 teaspoon cream of tartar, ½ teaspoon baking soda, and 1½ cups flour to make a batter.

  2. Pour the batter over the apples and bake for 30 to 40 minutes.

Make the sauce

  1. Beat together 1 cup sugar and ½ cup butter for the sauce.

  2. Stir 1 tablespoon cornstarch into 1 cup boiling water, boil for 1 minute, and pour over the sugar and butter mixture, stirring thoroughly.

  3. Flavor the sauce with lemon or vanilla.

What each ingredient does

Tart apples
Provide the fruit base that softens under the batter and releases tartness into the pudding.
Flour
Forms the structure of the batter so it sets around the apples as it bakes.
Butter
Adds richness and tenderness to the batter and the sauce.
Egg
Binds the batter and helps it set during baking.
Cream of tartar
Acidifies the batter and reacts with baking soda to help it rise.
Baking soda
Reacts with the acid in the cream of tartar to produce gas that lightens the batter.

The step that matters

Stirring cornstarch into boiling water. Cornstarch must be fully dispersed in boiling water before it is poured over the sugar and butter; boiling activates its thickening so the sauce turns smooth and slightly thick rather than lumpy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, egg, butter, milk, cream, flour, sauce):
