Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the base and whites, whipped to stiff peaks, give the pudding its light, airy structure.
Sugar
Sweetens the pudding and helps stabilise the beaten egg mixture.
Lemon juice
Adds acidity and bright lemon flavour that balances the sweetness.
Lemon rind
Contributes aromatic oils that add lemon fragrance and flavour.

The step that matters

Folding in the egg whites. Whites beaten to stiff peaks trap air that gives lift. Folding gently keeps that air in; stirring or deflating the foam makes the pudding dense.

Swap the lemon
