Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the main flavour and fruity body of the sponge.
Gelatine
Sets the liquid mixture so it holds its shape when chilled.
Egg whites
Beaten into the mixture to create a light, airy foam texture.
Sugar
Sweetens the dessert and helps stabilise the foam while sweetening the fruit.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Beat until the mixture begins to thicken. Egg whites must be folded into a mixture that is cool and partly set; if it is too warm the foam deflates, and if over-chilled it stiffens before the whites are evenly incorporated. Stop beating once it thickens so the sponge stays light.

Swap the lemon

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
