Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Pare and slice the raw potatoes thinly, about 1/8 inch thick.

  3. Drain or wipe the potatoes dry.

  4. Butter an ordinary earthen pudding dish.

Layer and bake

  1. Place a layer of sliced potatoes in the dish, sprinkling with salt, pepper, and bits of butter. Add 2 to 3 tablespoons of milk and a light dusting of flour.

  2. Repeat layering until the dish is filled, ensuring enough milk is added to see it but not cover the potatoes. Dot the top with more butter in small pieces to help it brown.

  3. Bake until the potatoes are tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Form the bulk of the dish, becoming tender and soft as they bake.
Milk
Provides liquid that gently cooks the potatoes and forms a creamy sauce.
All-purpose flour
Lightly thickens the milk so the sauce turns creamy rather than watery.
Butter
Adds richness and helps the top brown in the oven.

The step that matters

Keep the milk level below the top layer. Enough milk must reach the potatoes to cook them and make sauce, but covering the top stops it from browning and can make the dish soggy.

Swap the potato

How well each one fits the dish's main ingredients (pepper, butter, milk, flour):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Shallotfits less well

Fit is the average pairing score against pepper, butter, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
