Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
The main ingredient, gently scalded to firm its flesh before it is steeped in acid.
Cold vinegar
Acidity that preserves the oysters and gives the pickled flavor.
Allspice
Warm aromatic flavor that seasons the oysters as they pickle.
Cloves
Strong aromatic spice that adds warmth to the pickling liquid's flavor.

The step that matters

Scald without boiling. Boiling toughens oyster flesh and makes it shrink and dry. Gentle heat just below a boil firms the edges while keeping the oysters tender and juicy.
