Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Drain the oysters and remove all bits of shell.

  2. Butter a deep dish.

Layer and bake

  1. Cover the bottom with rolled crackers.

  2. Add a layer of oysters seasoned with coarse sea salt, black pepper, and small bits of butter.

  3. Repeat layers until all oysters are used, leaving crackers on top.

  4. Pour enough milk over the oysters, mixed with 2 beaten eggs.

  5. Bake at 350°F (175°C) until set.

What each ingredient does

Oysters
Provide the main flavor and the body of the dish.
Eggs
Set the custard so the milk binds the layers together when baked.
Milk
Forms the liquid custard that moistens the crackers and oysters as it bakes.
Rolled crackers
Soak up the liquid and add a starchy structure between the oyster layers.
Butter
Adds richness and helps the top brown lightly in the oven.

The step that matters

Bake at 350°F (175°C) until set. Egg proteins set as they heat, so underbaking leaves the custard runny while overbaking makes it dry and grainy. Stop when the dish is firm in the center.
