Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the sweet milk, flour, eggs, and baking powder; mix well.

  4. Reserve ⅓ of the batter.

Spice and layer

  1. To the reserved batter, add mixed spices, grated nutmeg, molasses, and raisins; mix until combined.

  2. Pour the plain batter into three greased cake pans.

  3. Add the spiced batter to the center layer.

Bake

  1. Bake until a toothpick inserted in the center comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets.
Baking powder
Releases gas in the batter so the cake rises and turns light.
Flour
Forms the cake's structure as the batter sets in the oven.
Butter
Adds fat for tenderness and richness, and helps trap air when creamed with sugar.
Sugar
Sweetens the cake and helps create a tender crumb when creamed with butter.
Molasses
Adds moisture, dark color, and a deep sweet flavor to the spiced layer.

The step that matters

Bake until a toothpick inserted in the center comes out clean. The spiced center layer is denser and holds more moisture from molasses and raisins, so it bakes more slowly than the plain layers. Testing the center ensures it is fully set rather than gummy.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, milk, flour, egg, molasses, raisin):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against sugar, butter, milk, flour, egg, molasses, raisin. Candidates are from the same food group and used in at least 100 recipes.
