What each ingredient does

Mustard
Adds sharp, pungent flavor that defines the pickle's bite.
Flour
Thickens the dressing so it coats the vegetables rather than running off.
Vinegar
Provides the acidity that preserves and sharpens the pickle.
Sugar
Balances the sharpness of the vinegar and mustard with sweetness.
Cauliflower
Adds firm texture that holds up to the hot dressing.

The step that matters

Stirring the vinegar mixture while it scalds. Flour thickens by swelling in hot liquid, so constant stirring prevents lumps and scorching on the bottom of the pan, keeping the dressing smooth.
