Amber Pudding

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Butter a pudding dish.

  2. Layer rice mixture, then a layer of drained cooked apricots, followed by another layer of rice and another layer of apricots.

  3. Bake for 15 minutes at 400°F (200°C).

  4. Cover with meringue made from egg whites and sugar.

  5. Return to the oven until golden brown.

  6. Serve with a sauce made from the drained apricot juice, butter, and a little flour.
