The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Forms the gel network that lets the jelly set firm and hold its shape.
Sugar
Adds sweetness and helps balance the tartness of the juices and wine.
Wine
Provides the main flavor and some acidity to the jelly.
Lemon juice
Adds acidity that brightens the flavor and balances sweetness.

The step that matters

Soak the gelatin fully before dissolving. Gelatin must hydrate in cold water first so its granules swell evenly; dissolving it dry or lumpy leads to uneven setting and grainy texture in the finished jelly.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, orange, wine):

  1. Vanillafits about as well
  2. Lemonthe original
  3. Pineapplefits about as well
  4. Mangofits about as well

Fit is the average pairing score against gelatin, sugar, orange, wine. Candidates are from the same food group and used in at least 100 recipes.
