Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pastry

  1. Make a paste with flour, butter, and egg.

  2. Roll out to medium thickness and cut into small rounds.

Fill and shape

  1. In a bowl, mix lobster, white sauce, parsley, anchovy sauce, lemon juice, and cayenne pepper.

  2. Place small heaps of the mixture on half of the rounds.

  3. Cover with the other halves, pinch edges together, and make scallops.

Bake

  1. Place in a buttered bag, prick the top with a skewer.

  2. Bake in a hot oven at 400°F (200°C) for 15-20 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the paste that gives the patty pastry its structure.
Butter
Adds fat that makes the pastry tender and flaky as it bakes.
Egg
Binds the pastry paste and helps it hold together when rolled.
Lobster
Provides the main filling and its rich seafood flavour.
Thick white sauce
Binds the lobster filling and keeps it moist during baking.

The step that matters

Pinching the edges closed. If the edges are not sealed firmly, the filling can leak out in the oven. The pinched scallops hold the filling in while the pastry sets and browns.
