Why it works: Cinnamon and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,380 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Apple Dumplings
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 350°F (175°C).
Use a corer to remove the core from each whole unpeeled apple.
Fill the hollow of each apple with powdered sugar and optional spices to taste.
Divide the paste into rounds, one for each apple.
Wrap and bake
Place an apple on each round of paste and wrap it smoothly, wetting the edges to seal.
Grease a baking bag with butter and place the dumplings inside.
Bake in the preheated oven for 40 minutes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Whole unpared apples
- Provide the fruit filling that softens and turns tender as the dumplings bake.
- Paste crust
- Wraps the apples and bakes into a sealed, tender pastry shell around the fruit.
- Powdered sugar
- Sweetens the apple filling and helps it caramelise slightly inside the hollow.
The step that matters
Wrapping and sealing the paste. If the edges are not wetted and pressed closed, gaps let filling leak and the pastry can open during baking, so the dumpling loses its shape and juices.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
