What each ingredient does

Stale bread
Provides the body of the pudding, absorbing water and holding its shape once combined.
Moist sugar
Adds sweetness and moisture, and helps the pudding brown during cooking.
Sultanas or raisins
Add chewy pockets of sweetness and fruitiness throughout the pudding.
Beaten egg
Binds the mixture together and helps it set as it cooks.

The step that matters

Drain and press the bread. Bread that stays too wet will make the pudding soggy and loose, because excess water prevents the mixture from setting firmly as it cooks.

Swap the raisin

How well each one fits the dish's main ingredients (bread, sugar, egg):

  1. Vanillafits better
  2. Datesfits about as well
  3. Figfits about as well

Fit is the average pairing score against bread, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
