Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Provides the crisp, firm body that holds up after pickling.
Cucumbers
Supply crunch and fresh flavor that the vinegar brine soaks into.
Vinegar
Acidity that preserves the vegetables and gives the pickle its sharp taste.
Whole mustard seed
Adds pungent, slightly bitter flavor and a crunchy texture to the brine.
Turmeric powder
Gives the pickles a bright yellow color and an earthy aroma.
Prepared mustard
Adds sharpness and emulsifying body to the finished pickle mixture.

The step that matters

Draining the vegetables well. Any water left after the 24-hour brine dilutes the hot vinegar, weakening its acidity and preservative effect and making the pickles soggy.
