Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Combine milk, egg yolks, corn starch, sugar, salt, and butter in a saucepan.

  2. Boil while stirring until thickened.

  3. Pour the mixture into a pudding dish.

Top and bake

  1. Beat the egg whites until stiff, then add 1 tablespoon of sugar and mix well.

  2. Spread the egg white mixture over the custard and brown it in a 350°F (175°C) oven.

Serve

  1. Serve cold with jelly or preserves.

What each ingredient does

Milk
Forms the liquid base that the starch thickens into a custard.
Egg yolks
Add richness and help set the custard as they cook.
Corn starch
Thickens the milk mixture when boiled while stirring.
Egg whites
Whipped into a stiff foam that forms the browned topping.

The step that matters

Boil while stirring until thickened. Cornstarch thickens only once it reaches a boil, and stirring prevents lumps and scorching on the bottom of the pan. Stopping early leaves a thin custard.
