What each ingredient does

Veal
Provides the meat and, as it stews and cools, the gelatin that lets the dish set firm.
Cooking water (in the method)
Carries flavor from the stewed veal and helps form the moist, jellied texture.

The step that matters

Cooling the mixture in the tin. The set depends on natural gelatin from the veal and its cooking liquid. The mixture must cool fully and undisturbed so the gelatin can firm up into a sliceable jelly.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (veal, onion, sage, pepper):

  1. Thymefits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Celerythe original

Fit is the average pairing score against veal, onion, sage, pepper. Candidates are from the same food group and used in at least 100 recipes.
