Why it works: Carrot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,053 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Parboil the sweetbreads as directed.

  2. Preheat the oven to 400°F (200°C).

  3. In a baking dish, layer a few slices of salt pork.

  4. Place the parboiled sweetbreads on top of the salt pork.

  5. Sprinkle the chopped onion, carrot, celery, and parsley over the sweetbreads.

Bake and serve

  1. Bake for 20 minutes.

  2. Cut the bread into an oval shape.

  3. Fry the bread in oil until brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; parboiling firms them so they hold their shape while baking.
Salt pork
Renders fat into the dish, keeping the sweetbreads moist and adding savoury flavour.
Onion
Adds aromatic sweetness and flavour as it softens in the baking dish.
Bread
Fried until brown, it forms a crisp base that the sweetbreads rest on.

The step that matters

Fry the bread until brown. Browning adds crisp texture and toasted flavour through the Maillard reaction. Pale or soggy bread would leave the base dull, and oil that is too cool soaks in rather than crisping the surface.

Swap the peas

How well each one fits the dish's main ingredients (onion, carrot, celery, parsley, pork, bread):

Fit is the average pairing score against onion, carrot, celery, parsley, pork, bread. Candidates are from the same food group and used in at least 100 recipes.
