Boiled Rice

Ingredients

Directions

Prepare

  1. Wash the rice thoroughly.

  2. In a graniteware stew pan or kettle, combine the rice and boiling water, adding the salt.

Cook and drain

  1. Boil uncovered for about 15 minutes, or until the rice is soft.

  2. Test the rice by pressing a few grains between your fingers.

  3. Once cooked, drain the rice in a colander, shaking to remove excess water.

  4. Toss the rice with a fork to help it dry.

Dry and serve

  1. Set the colander on a tin dish or pie plate in the oven with the door open, or on the back of the range in a warm place.

  2. Allow the rice to dry for about 20 minutes until each grain is separate, tender, and dry.

What each ingredient does

Rice
Absorbs the boiling water and softens, forming the body of the dish.

The step that matters

Drain and dry the rice thoroughly. Excess surface water makes rice gummy and clumped. Shaking, tossing, and a short warm-air drying let surface moisture evaporate so the grains stay separate.
