Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the main body that absorbs the vinegar and seasoning as it pickles.
Vinegar
Provides the sharp acidity that preserves the eggs and gives the pickled flavour.
Whole cloves
Add warm, aromatic spice that infuses into the eggs during the rest.
Ground mustard
Adds pungent, sharp flavour to the pickling liquid.

The step that matters

Pour the boiling vinegar over the eggs in a glass jar. Hot liquid poured into cold glass can cause thermal shock and crack the jar. Hot vinegar also helps the flavours penetrate the eggs, so it should go in while still boiling.

Swap the clove

How well each one fits the dish's main ingredients (egg, vinegar, pepper, mustard):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits better
  4. Clovethe original

Fit is the average pairing score against egg, vinegar, pepper, mustard. Candidates are from the same food group and used in at least 100 recipes.
