Bread From Dry Yeast

Ingredients

Directions

  1. Boil the potato, drain, and mash it until smooth.

  2. Pour the boiling water over the mashed potato and stir until creamy.

  3. Soak the yeast-cake in ½ cup lukewarm water.

  4. At 4 p.m., combine the potato mixture and soaked yeast in a bowl, adding enough flour to make a thick batter.

  5. Set the batter in a warm place (at least 75°F) to rise until light and spongy by 9 a.m.

  6. In a bread pan, mix 2 quarts of flour with the melted lard, creating a well in the center.

  7. Add the risen batter to the well and knead until a round ball forms, adding flour as needed.

  8. Knead for at least 20 minutes, ensuring the dough doesn't stick.

  9. Return the dough to the pan, cover with a cloth, and let it rise in a warm place overnight.

  10. In the morning, divide the dough into three parts, shape each into a smooth loaf, and place in separate pans.
