Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Soak the bread crumbs in the milk for 30 minutes.

  2. Beat the egg yolks and sugar together until light, then add to the soaked crumbs and milk, stirring well.

  3. Mix in the lemon rind and juice.

  4. Pour the mixture into a pudding dish and bake at 350°F (175°C) for 30 minutes.

Meringue and topping

  1. Whip the egg whites until stiff, then gradually add 3 tablespoons of sugar.

  2. Once the pudding is done, layer the whipped egg whites on top, followed by jelly, and finish with the remaining egg whites.

  3. Brown the top to a delicate color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks set the custard, while whipped whites give the topping its light, airy structure.
Bread crumbs
Absorb the milk and give the pudding a soft, tender body.
Milk
Provides the liquid that the eggs set into a custard.
Sugar
Sweetens the custard and helps stabilize the whipped egg whites.
Lemon
Adds bright acidity and aroma that balance the sweetness.
Jelly
Adds a layer of sweetness and fruit flavor between the pudding and meringue.

The step that matters

Whipping and topping the egg whites. Whites must be beaten until stiff and sugar added gradually, so the foam holds its shape. Under-whipped or unstable whites can weep or collapse during browning.

Flavor stand-ins for the lemon

  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
