Peach Bavarian Cream

Ingredients

Directions

Prepare the peaches

  1. Soak the gelatine in cold water.

  2. Peel and stone the peaches, then chop them finely.

  3. Place the peaches in a small saucepan over low heat, adding a little water if needed, and mash them as they cook until smooth.

  4. Stir in the sugar until dissolved.

  5. Strain the peach mixture through a fine colander to remove lumps.

Make the cream

  1. Add the dissolved gelatine and ½ pint of cream to the peach mixture, stirring well.

  2. Set the mixture aside in a cool place.

  3. Whip the remaining cream until stiff.

  4. Fold the whipped cream into the peach mixture as the gelatine begins to set.

  5. Pour the mixture into a mold.

  6. Refrigerate for 4 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the main fruit flavour and, once mashed, the body of the cream.
Sugar
Sweetens the peach mixture and balances its tartness.
Cream
Adds richness and fat, and whipped, lightens the set dessert.
Gelatine
Sets the mixture so it holds its shape when chilled.

The step that matters

Fold the whipped cream in as the gelatine begins to set. If the gelatine has set too firmly, the whipped cream will not blend evenly and the dessert may be lumpy; if it is still liquid, the cream will deflate and the mixture will not hold its shape.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Peachthe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
