Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Peach Sponge
Ingredients
Directions
Prepare the gelatine and syrup
Soak the gelatine in 1/2 cup of water for 2 hours in a cool place, or 30 minutes on the back of the stove if in a hurry.
Boil the remaining water and sugar together for 15 minutes.
Mash the peaches finely and press them through a fine colander, then pour the syrup over them.
Make the sponge
Place the saucepan with the mixture in another saucepan filled with boiling water and cook for 5 minutes, stirring constantly.
Add the soaked gelatine and stir for another 5 minutes.
Place the pan in cold water and stir until it begins to cool, then fold in the beaten egg whites.
Continue stirring until the mixture starts to harden, then pour it into a mold and refrigerate.
Serve
To serve, unmold the sponge and serve with cream and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the mixture so it holds its shape when unmolded.
- Egg whites
- Beaten into the mixture to give the sponge its light, airy texture.
- Peaches
- Provide fruit flavour and moisture to the sponge.
- Sugar
- Sweetens the syrup and the finished sponge.
The step that matters
Folding in the egg whites. The mixture must be cool and only just starting to thicken before the beaten egg whites are folded in. If it is too warm, the whites deflate and lose their airiness; if it sets too far, they will not blend in evenly.
