Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a light, firm sponge as it cools.
Egg whites
Whipped into foam, they lighten the mixture and give the sponge its airy texture.
Strawberries
Supply the main flavour and fruit body of the sponge.
Sugar
Sweetens the puree and syrup and balances the tartness of the strawberries.

The step that matters

Folding in the whipped egg whites. The mixture must be cool and only slightly thickened before folding; if it is too warm or too set, the foam deflates or the sponge becomes lumpy. Gentle folding keeps the air bubbles that give the sponge its lightness.

Swap the lemon
