What each ingredient does

Cranberries
Provide the tart flavor and the body that the sauce is built around.
Sugar
Sweetens the tart berries and helps the sauce set as it cools.
Water
Softens the berries as they cook and creates the liquid base for the sauce.

The step that matters

Cook slowly for 20 minutes. Gentle cooking keeps the berries intact while their skins soften and release pectin, which lets the sauce thicken and hold its shape when cooled.
