Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Potato Stuffing

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Peel and boil the potatoes until tender, then mash them finely.

  2. Add pepper, sage, salt, butter, and onion juice to the mashed potatoes.

Stuff and truss the goose

  1. Stuff the mixture lightly into the breast and body of the goose.

  2. Sew and truss the goose as you would for turkey.

  3. Sprinkle the outside with salt, pepper, and flour, then cover with slices of fat salt pork.

Roast and baste

  1. Roast the goose in a 400°F (200°C) oven for 45 minutes.

  2. Remove the pork, baste with the pan drippings, and pour off excess oil if necessary.

  3. Baste every 15 minutes after the first 25-30 minutes of roasting.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Mashed to form the bulk of the stuffing, giving it a soft, moist body.
Butter
Adds fat and richness, carrying flavour and softening the mashed potato texture.
Onion juice
Adds a savoury onion aroma to the mashed potato stuffing.
Sage
Contributes the herbal aroma that defines the stuffing's flavour.

The step that matters

Stuffing the goose lightly. Stuffing packed tightly expands and resists heat, so the centre may stay underdone while the outside overcooks. Loose filling lets heat reach every part and the stuffing cook through.

Swap the sage

How well each one fits the dish's main ingredients (potato, pepper, butter, onion):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Sagethe original

Fit is the average pairing score against potato, pepper, butter, onion. Candidates are from the same food group and used in at least 100 recipes.
