Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled potatoes
Provide the bulk and body of the fritter interior.
Flour
Gives the batter structure so the fritters hold together while frying.
Eggs
Bind the mixture and help set the fritters as they cook.
Milk
Adds moisture, loosening the batter to a spoonable consistency.
Baking powder
Releases gas during frying, lightening the fritters so they puff.

The step that matters

Heating the lard until blue smoke rises. Oil that is not hot enough lets the batter soak up fat and turn greasy, while the batter needs high heat to set quickly on the outside.

Swap the potato

How well each one fits the dish's main ingredients (flour, egg, milk):

  1. Arrowrootfits better
  2. Asparagusfits about as well
  3. Chivefits about as well
  4. Potatothe original

Fit is the average pairing score against flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
