Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the main body of the dish, cooking soft inside while the outside crisps.
Beaten egg
Binds the cracker crumbs to the slices so the coating holds during frying.
Cracker crumbs
Form a crisp, browned coating when fried in fat.
Lard
Conducts heat for frying and promotes browning and a crisp crust.

The step that matters

Fry the slices in hot lard until well done and nicely browned.. If the lard is not hot enough, the coating absorbs fat and turns greasy instead of crisping. Frying in hot fat sets the crumb coating quickly, and the browning comes from the Maillard reaction at the surface.
