Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Peach Sponge
Ingredients
Directions
Prepare the gelatin and syrup
Soak the gelatin in ½ cup of water for 2 hours in a cool place, or 30 minutes on the back of the stove.
Boil the remaining water and sugar together for 15 minutes.
Make the peach sponge
Mash the peaches and press them through a fine colander.
Pour the syrup over the peaches.
Place the saucepan with the mixture in another pan of boiling water and cook for 5 minutes, stirring constantly.
Add the soaked gelatin and stir for 5 minutes.
Place the pan in cold water and stir until it begins to cool.
Fold in the beaten egg whites and stir until it starts to harden.
Set and serve
Pour the mixture into a mold and refrigerate until set.
Unmold the sponge and serve with cream and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid mixture into a firm, sliceable sponge as it cools.
- Egg whites
- Beaten into the mixture to give the sponge its light, airy texture.
- Peaches
- Provide the fruit flavour and moisture that becomes the body of the sponge.
- Sugar
- Sweetens the peach mixture and helps form the syrup base.
The step that matters
Fold in the beaten egg whites while the mixture is only starting to set. If the mixture is too warm, the egg whites deflate and lose their air; if it has set too firmly, they will not blend in evenly. Cooling just until it begins to thicken lets the foam hold while staying mixable.

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
