Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Starch that thickens the filling as it cooks.
Egg yolk
Adds richness and helps thicken and set the filling.
Sugar
Sweetens the filling and balances the lemon's acidity.
Lemon
Provides the tart flavor and aroma from juice and rind.
Butter
Adds fat for a smoother, richer texture.

The step that matters

Stir in the flour mixture once boiling. The starch must be fully boiling to thicken properly, and the egg yolk can scramble if it gets too hot too fast, so the mixture should be stirred constantly while it cooks.
