What each ingredient does

Water
Forms the liquid base that the graham meal thickens as it cooks.
Graham meal
Thickens the water into a porridge as its starch swells when cooked.

The step that matters

Stirring during the 30-minute boil. Starch in the meal settles and can stick to the bottom of the pot and scorch. Stirring now and then keeps the gruel smooth and evenly thickened.
