Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, sliceable jelly as it cools.
Oranges
Provide the main juice, giving the jelly its flavour, colour and acidity.
Simple syrup
Supplies sweetness and body, balancing the sourness of the citrus juice.

The step that matters

Adding the soaked gelatin to the warm syrup. Gelatin must dissolve fully in warm liquid before the juice is added and the mixture cools. If it is not fully dissolved or the liquid is too hot, it may not set evenly or firmly.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, orange, gelatin):

  1. Vanillafits better
  2. Lemonthe original
  3. Pineapplefits about as well
  4. Mangofits about as well

Fit is the average pairing score against syrup, orange, gelatin. Candidates are from the same food group and used in at least 100 recipes.
