Why it works: Nutmeg and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Spiced Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the milk.

  5. In a separate bowl, combine the flour, baking soda, cream of tartar, nutmeg, and cinnamon.

  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Sugar
Creams with butter for a light texture and adds sweetness and browning.
Eggs
Add structure and richness, binding the batter as it sets in the oven.
Flour
Provides the main structure that holds the cake together as it bakes.
Baking soda
Reacts with the acid in cream of tartar to produce gas that lifts the batter.
Cream of tartar
Acidic partner to baking soda, helping the cake rise and stay tender.

The step that matters

Gradually add the dry ingredients to the wet mixture, stirring until just combined.. Once flour meets liquid, gluten begins to develop, so overmixing makes the cake tough and dense. Stop stirring as soon as no dry streaks remain.
