What each ingredient does

Large ripe cucumbers
Provide the main body and crisp texture of the pickles.
Coarse sea salt
Draws water out of the cucumbers, firming them and helping them stay crisp.
Cold vinegar
Adds acidity that preserves the cucumbers and gives the pickles their sharp flavour.

The step that matters

Let the mixture stand overnight. Salt draws water out of the cucumber through osmosis. Standing long enough firms the flesh, and rinsing and fully draining afterward removes excess salt and moisture so the pickles stay crisp rather than soggy or overly salty.
