Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 992 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Yeast and Bread
Ingredients
Directions
Pare and boil the potatoes in 3 quarts of water with the hops in a muslin bag until soft.
Pour the hot water over 1 pint of flour in a crock.
Squeeze the hops, mash the potatoes, and add 1 quart of cold water, then strain into the crock.
Add 1/2 teacup of coarse sea salt, 1 cup of sugar, and 1 tablespoon of ginger; let stand for 2 days until it settles.
Transfer to a jug, cork tightly, and store in a cool place.
For the bread, boil 6 potatoes, drain, and mash them.
Pour 3 pints of cold water over the mashed potatoes and strain.
Add flour to create a thin batter and mix in 1 cup of yeast from the jug.
Let rise, then stir in enough flour to form a stiff dough and let rise again.
When light, shape into loaves and let rise once more.
