Light Bread with Potatoes

Ingredients

Directions

  1. Make the starter two days before baking by mixing potato water, sugar, mashed potato, and salt in a cool place.

  2. When ready to bake, add warm water and all ingredients except the yeast to the starter. Let it stand overnight.

  3. The next morning, reserve 1 pint of the mixture for the next baking.

  4. Mix the remaining mixture into a stiff dough and knead it.

  5. Let the dough rise, then work it down, let it rise again, and shape it into loaves.

  6. Allow the loaves to rise until they double in size, then bake.
