What each ingredient does

Cauliflower
Forms the bulk of the puree and gives it its main body and flavour.
Cream
Adds moisture and richness, giving the puree a smooth, silky texture.
Butter
Adds fat and richness, rounding out the flavour and smoothness at the end.

The step that matters

Rubbing the mixture through a fine sieve. Pressing the cooked cauliflower through a fine sieve breaks down fibres and removes lumps, which is what makes the puree smooth. Skipping or rushing this leaves a coarse, stringy texture that no later addition of cream fully fixes.
